Smooth Pool Gin Oyster recipe

1 dozen Streaky Bay Oysters
the juice of 1 big lime
1 teaspoon lime zest finely grated
45ml of Smooth Pool Gin
1/2 teaspoon ginger grated finely
2 teaspoons of mirin
1/2 teaspoon of white sugar
1/2 red birds eye chilli
Buy the freshest Streaky Bay oysters available and open them just before serving.
In a small jug mix the lime juice and zest, Smooth Pool Gin, ginger, mirin, sugar and chilli, refrigerate until required.
Just before serving spoon a small amount of the Gin mix into each of the oysters and present the oysters on a tray with salt (to keep them upright).
Why Smooth Pool Gin for this recipe? The subtle cucumber and pepper notes of this Gin tie in well with the salty briny taste of the fresh oyster.
